I've been a long-time fan of Nick's style in cuisine. The sense of flavor that he draws from the earth in utterly inspiring. I sat down with him before dinner service in his busy Brookewood Hills restaurant last July.
Since we recorded this episode, Chef Nick announced two new concepts coming to West Midtown -- Aix, a Provencal restaurant and neighboring space Tin Tin, a wine bar. Both slated to open later this year.
